I was watching one of my colleague using Matlab and I noticed that when he writes a function, on the screen appears the syntax for that function (green arrow in the .jpg file attached), and also the name of the variables in a window (red arrow in the .jpg file attached). How can I enable this feature on my Matlab? Thanks for the help.

See https://www.mathworks.com/help/compiler/mcc.html#d124e20756 for a description of code suggestions.
For this to happen you might need Preferences -> Editor/Debugger -> Automatic Completions -> Suggestions and completions -> Show suggestions automatically
You might also be interested in https://www.mathworks.com/help/matlab/matlab_prog/customize-code-suggestions-and-completions.html which shows how to add code suggestions for functions that you yourself write.

In R2021a, Preferences -> Keyboard -> MATLAB Keyboard Preferences . Then
- Command WIndow -> Enable function hints
- Editor -> Enable function hints
