How can I export a m file to excel ?

I am working on a project in which I am comparing two images. Now the matrix for one of the images is 231x338x3 uint8 and I want to export this matrix into a excel or access file.

Neel - why Excel? You may find http://www.mathworks.com/help/matlab/import_export/exporting-to-excel-spreadsheets.html useful.

Try for this..
as you mentioned you have 231x338x3 matrix, it means it is having 3 sets of 231x338
let us consider, it is matrix 'A' of 231x338x3 size
for i = 1:size(A,3)
xlswrite('ABC.xlsx', A(:,:,i), ['Sheet',num2str(i)], 'A1');
end
