Full control of plot axes and labels?

I am having troubles with plot of figure. Seems it has alot of data point and respond quite slowly when I tried to change the fig file.
So I would like to set all figure properties on fig print.
My questions are how to control the axis font size, color, and size and color of the labels. For some reason the fig file color is some grey. I would like it black. Thank you.
x=linspace(1,10,20); y=x.^2;
plot(x,y)
ax = gca;
ax.FontSize = 11;
xlabel('X [s]');
ylabel('Y [m]');
xlim([0 5]);ylim([0 40])

Changing fig file from its menus is easier. But is too slow. So I want to genrate the fig file and save as image.

.fig files do not have menus. figures often have menus, but not .fig files.
