What exactly do you mean by converting images into bipolar values?

Bipolar Values, considering two data value only (Same number with Positive & Negative)
bw_image=%Convert to binary image
image_data=double(bw_image);
image_data(image_data==0)=-1;
In the resultant image, there are only two pixels elements +1 and -1
or Are you looking for more data type?
