Mapping a Coastline of the Antarctic showing different boundaries

Am trying to create a map of the antarctic, that will show different melt boundaries over time.
Have tried several ways of doing this, but haven't even been able to create an original map. I'm not very good with Matlab, and was wondering if anyone could help?

You haven't given us much to go on. Perhaps to get started, check out the link Create Your First World Map.
If I were going to create a map of the Antarctic, I'd follow this example. This does require the Mapping Toolbox.

Unfortunately, that example shows Antarctica upside-down from the standard projection, and the coast line is horribly inaccurate. It also plots in geo coordinates, which is a pain, because most Antarctic datasets are distributed in projected polar stereographic coordinates that allow for easy spatial analysis. For these reasons I recommend Antarctic Mapping Tools.

To make maps of Antarctica, try Antarctic Mapping Tools. For melt data you might cosider my plugin for the Adusumilli ice shelf melt dataset.
