Extracting RGB Values from multiple Images for Machine Learning

Hello Guys!
I am new on using Matlab and I was interested on using this to extract RGB Values from multiple images. What I want to do was to automate (maybe insert a code in For loop) the extraction of RGB Values on multiple images and use them to train my system. My system will gather data of color and correlated with time (may by minute or Hour). Let's say I want to gather RGB Values of time value 0 - 24 passed incrementing to 1 of a leaf. Then to test the accuracy of my gathered data, I will try to pick a leaf that let's say 3 hours had already passed from being picked. Then when we take a photo of it and use the gathered data, the system should predict that the leaf was picked 3 hours ago.
I hope someone can help me on this... This will be a great help for my college thesis.
