plot a map with irregular latitude and longitude

Dear All,
I have data with lat (latitude), lon (longitude), and z, I want to draw a map. However the latitude and latitude of data are irregular.

With geoscatter:
geoscatter(lat, lon, 50, z, 'filled');
geobasemap('topographic')
colorbar
