Generating gridded data out of data points

Hello,
i have three vectors containing the x,y and z coordinates of data points. Is it possible to convert these vectors into "gridded data" ? And how? Thanks for the help!

Not exactly. I'm trying to use this example on my data. In the beginning they are doing this:
x = sort([(0:10)/10,.03 .07, .93 .97]);
y = sort([(0:6)/6,.03 .07, .93 .97]);
[xx,yy] = ndgrid(x,y); % note: ndgrid rather than meshgrid
z = franke(xx,yy);
i want to use this code with three vectors as input and not the "franke" funktion. The vectors contain the x,y and z values of data Points. I want to fit a tensor product spline to my data
