How to track a continuously varying sine wave

I have a sine wave which continuously changing amplitude and phase. I was wondering if there is a technique like EKF or Particle Filter that can help me track the signal and also gives its amplitude and phase value at each step. I have attached the signal's picture and .mat file along with.
