How to define a default initial temperature as a value like "T_start" in simulink (not Matlab)? so I can change all my initial temperatures in different block parameters at once by just changing the value of T-start in Simulink.

The PostLoadFcn callback in the Model Explorer can be used to initialize a parameter when the model is opened.
In Simulink, go to View->Model Explorer.
In the Callbacks tab of Model Properties, select PostLoadFcn and define the variable there.
