i have a multiple .txt files which contains several columns of velocity in xand y direction. I want to plot a velocity profile by importing all .txt files.

You can use the "Import Data From file". You will import the data to the worskpace, then you can do whatever you want.
If you have a .m file, I think it is easier to use the importdata command:
importdata('myfile.txt');
Use the Help to read further about this command.

d = dir('*.txt');
nfiles = length(d);
for k = 1:nfiles
data= importdata(d(k).name);
%%%%%
% quiver(x,y,u,v)
% do what you want
end
