I'm not trying to learn how to zoom in on a local plot in MATLAB; rather, I want to learn how to check the loss function after reinforcement learning training, find the loss function data, and then plot the loss function curve.

We don't know what kind of trainingStats output you have. It would be advisable to rewrite your post to focus more detail on what you have done, what output you now have, and what difficulties you are facing extracting info from it.
