Normalization can be done in multiple scale range.

You may follow the following way

image_data=double(original_image)
%Normalize pix values in the range 0 & 1
normalized_im=imadjust(image, [minVal, maxVal], [0, 1]);
%minVal & maxVal represent the minimum & maximum pixel value in the image
%display image to check
imshow(normalized_im,[])
