how does this code make sense?

I run a code and get a cell like in below. after so many reading and coding and running I concluded that I don't know how a cell works. I read the help file in matlab website many times, yet I couldnt get it. Can you make me to understand why this code works how I wanted it to be?
(p.s. I know english but not so fluently so it might be the problem even though I don't think so.)
tvA = {'A1','A2','A3','A4','A5','A6','A7'};

Dealing with cell arrays can be cumbersome, but I think you get the cell array part just fine. Maybe you mistook the way your loops were structuring the array, or maybe it's the reshaping/permutation that's the cause of confusion. I'm going to reduce the example so that maybe it's a bit easier to see what's going on.
% shorter example
tvA = {'A1','A2','A3'};
tvB = {'B1','B2','B3'};
tvC = {'C1','C2','C3'};
for j1 = 1:numel(tvA) % this is dim 1
for i = 1:numel(tvC) % this is dim 3
for t = 1:numel(tvB) % this is dim 2

I think there's two things going on here. I think you might be looking at the loop structure and thinking that the cell array is shaped such that its dimensions correspond to the order of the loops instead of the order of the indices in the output assignment. If you're looking at the loop order, you might think the cell array dimensions correspond to [A C B] instead of [A B C].
If you then mistake the way the argument to permute() works, you might come to the conclusion you're pointing at. When you say permute(tempVarABC,[3 1 2]), that means that dimensions [1 2 3] of the output array are taken from dimensions [3 1 2] of the input array, not the other way around. If you had that relationship inverted, you might conclude that [3 1 2] means to map input dimensions [1 2 3] to output dimensions [3 1 2].
If the cell array dimensions are thought to be ordered as [A C B], then this hypothetical permutation would map such that the output is ordered as [B C A].
That's just a wild guess on my part. If I'm totally wrong, feel free to explain your reasoning for why you expect [3 1 2] would result in what you want.
