When launching MATLAB on macOS 12, why do I receive the following error about fonts?
Warning: the font "Times" is not available, so "Lucida Bright" has been substituted, but may have unexpected appearance or behavior. Re-enable the "Times" font to remove this warning.

With the launch of macOS 12, we are aware of the above issue that causes a warning when MATLAB is started.
The warning has no functional effect on MATLAB. The only negative impact is the undesirable message appearing on startup.
In order to prevent the warning message from appearing, please ensure MATLAB is updated to at least R2021b Update 3 or any release since R2022a. Releases prior to R2021b are not qualified on MacOS 12.
Additionally, you may be able to overcome this issue by installing either the "Times Roman" or "Times" font.

I solved this problem recently just by installing the font.
You can download the Times font from the Internet (you can google it, but I got it from https://www.freebestfonts.com/timr45w-font) and then install it with the Font Book app from MacOS.
Now, restart Matlab and the warning should no longer appear.
