I get that the above plot is sinusoidal waves in multiple phases, but I don't understand how to isolate them into bold gren line. I have tried googling torque ripple or cogging but came with no luck. Anybody point me in the right direction, that'd be great.

Try something like this —
t = linspace(0, 720, 1000);
s = [sind(2.5*t); sind(2.5*t+180)];
figure
plot(t,s, '--')
hold on
plot(t, max(s),'-g', 'LineWidth',2)
hold off
grid
.
