savePDF is a simple function, nicely crop the MatLAB figure and save it as PDF to a designated directory. If the directory doesn't exist, it creates one.
plot_name = name of the figure (e.g., 'My_Figure')
plot_path = folder to be saved as PDF (e.g., './My_Folder')
