HOW TO DO FEATURE EXTRACTION OF FRESH AND ROTTEN FRUITS.

Hi, i need to do my assignment which is to do feature extraction of fresh and rotten fruits. I have 6 folders of fresh and rotten fruits which are Fresh Apples, Fresh Oranges, Fresh Bananas, and Rotten Apples, Rotten Oranges, Rotten Bananas. How to do the extraction to detect the fresh and rotten fruits? Thank you in advance.

Figuring out which features make sense to use is a research task, not a MATLAB task.

If you do not know which features to use, then you can research to find every feature computation that you can find in literature, and code them all . Then you can use Feature Selection to figure out which ones are useful for your purpose.

Okay, but is there any existing code on how to detect the different in shape and size to differentiate the fresh and rotten fruits?

Yes. Students have done projects along those lines in the past, though possibly not with those particular fruits.

You might have difficulty tracking down a student who has done that and arranging to get a copy of the code from them, and more difficulty after that in studying the algorithms and then rewriting using different techniques so as to avoid potential plagiarism claims.
