How to Extract data and image from envi file (.N1 and .hdr) from bilko practice?

Previously, I wrote some question about same topic, and someone who has a expert acknowelge gave me the answel.

But I did not understand a contents well, and I has a few difficulties to code in matlab due to beginner coder.

So I wonder that how to extract data and image using attached files

(The file was obtained by BILKO parctice guide: https://www.learn-eo.org/software.php )

There is two files attached. one is 'CS_OFFL_SIR_SAR_2A_20120404T044246_20120404T045246_B001.DBL' and the other is ' CS_OFFL_SIR_SAR_2A_20120404T044246_20120404T045246_B001.HDR

Even though, I cannot open the files using matlab, Bilko program can show information, structure and image of files.

and I opened the files using Bilko, attached result display for reference.

Please, give me the way for extracting data using matlab such as result of bilko (attached file)

(For example, result data: Bands - SIR_SAR_L2A - geight_of_surface)
