How to use pcolor with putting color smoothly?

Hi,
I'd like to ask you the difference between matlab and gnuplot.
When I use plot like pcolor in gnuplot, gnuplot automatically adjust the values to show lattice-like values smoothly.
When I use pcolor to color in an array in Matlab, for example, I can get the figure attached.
How to color in some values with pcolor smoothly in the red region like gnuplot doing this?

How do I know that's actually not really in the data and being shown accurately. Please attach your gray scale image.
Of course you could blur your image before displaying it. And you should display with imshow(), not pcolor(). pcolor() will not display the last row and last column of the image (try it with a small image of 4 rows and 4 columns just to prove it to yourself)!
