I already discretized pde by central difference method, but not sure how to create a code for iterative methods such as Jacobi and Gauss Seidel.

Sparse linear solvers are already available in Matlab, the backslash operator per default uses the Umfpack direct solver

for iterative solvers you can for example use gmres or bicg
