Microsoft deliberately made it difficult to communicate with XBOX 360 except through their own hardware and software. The software to talk to XBOX 360 is not available.
The situation is different for XBOX One, which uses a different and documented protocol.

Some people have reported that with some work they can get the color information but not the depth information. Other people say they cannot get anything.
Microsoft does not want you to be able to connect an Xbox 360 Kinect to a PC. It was originally possible (first release, first hardware version) but they changed the hardware and software to make it difficult to do. Not MATLAB's fault.

I had a similar issue where DeviceIDs: (1x0) cell
"Adaptor not supported" - or words to that effect
After installing the 'Kinect for Windows SDK v1.6' and restarting MATLAB it then discovered the Kinect I have.
For me:
- MATLAB 2015b with the Image Acquisition Toolbox
- Kinect XBOX 360 (that came with an adaptor piece that forks into a USB and power input)
