OSX 10.10 problem with special chars

Hello, I've bought today my mac and I'm having a lot of troubles with special chars. I surfed on Internet for one hour, without solving my problem.

I read this http://www.mathworks.com/matlabcentral/answers/9738-problem-opening-files-containing-special-characters and similar posts, but I couldn't solve my problem

Basically MATLAB is not able to manage accents. I understand the fact MAC uses a different way to manage special chars, but I don't understand how to fix the problem.

I have a folder called Università and I wanna get access on it. Moreover, it looks like a problem in general

>> disp('Università') Universit

The à disappeared.

I followed a lot of guide (set LC_ALL, set this, set that). No lucky so far.
