"Musical Sound Processing" is not specific enough to be something you can take action on.

Vehicle Number Plate recognition can be a fair bit of work to get right.

I think you do not understand. ANY project can be either easy, or too difficult for you to handle. What matters is if you understand MATLAB sufficiently to solve the problem, if you understand the task you need to accomplish. If you don't, then don't bother. Find something you DO understand. And all of that means we cannot really help you, because we have no idea what you do know.

I would strongly suggest you talk to your teacher. They will know what you have learned in class. They will be able to make suggestions that would apply to you.

Unfortunately, we never learn MATLAB for the duration of the study. That is why I do not know anything about MATLAB. That is why I ask for an opinion on the easiest project because I will try to work on it and deliver it in less than a week. This time is very limited to learn and master MATLAB.

True, as MATLAB is not part of the compulsory course in most Engineering programs. Most of the time, the students are simply given a list of projects are mostly related to a portion of the supervisor's research works. If the students are producing very good results, they will be published and the student is usually included as the co-author. This helps your supervisor achieving the KPI of the year. Your supervisor probably won't care whether you know MATLAB or not. Some even encourage to download samples from the File Exchange, and modify the codes to suit the applications.

This is effectively a test of the student skills. The list looks pretty much like IEEE standard project recommendations. With a list like that, the supervisor does not really care which one is chosen: the supervisor is looking to see how well you can perform under a bit of pressure, and perhaps get an idea of your level of coding skill.

At the moment it is not at all clear to me whether the supervisor expects work from scratch, or would be happy with adapted work.

Part of the test might be the extent to which you negotiate expectations. You probably do not have to just guess about what the supervisor is looking for: you can come up with questions about the requirements and ask your supervisor to narrow the bounds.
