How do I obtain a 2D or 3D representation of a georeferenced raster?

Hi all,

I'm trying to plot some georeferenced raster data (X, Y, Z colums) as in figure below, but I can't figure out how to do.

Can anyone help me please?

Thank you Kevin!!! I was searching for something in the Mapping ToolBox, but the surf function does exactly what I want!! 😉
